Most heaters just warm up the air around your food. It’s slow, and it’s honestly a bit inefficient. We do things differently with shortwave infrared (SWIR) lamps. Instead of messing with the air, these lamps send energy straight into the water and fats inside the food. It means the heat doesn’t just sit on the surface—it actually sinks in a few millimeters. You aren’t just scorching the outside; you’re heating the food from the inside out.
The Secret to that Perfect Crunch
You know that “crispy on the outside, juicy on the inside” vibe? That comes down to the wavelength of our quartz emitters. Because the radiation moves so quickly through the surface, it hits the moisture inside and turns into heat instantly. You get a fast, satisfying sear on the crust while the middle warms up right along with it. If you used the wrong kind of lamp, you’d end up with a burnt exterior and a center that’s still ice cold. Nobody wants that.
The Nitty-Gritty on the Gear
We use high-purity quartz tubes because these things get hot—really hot—and they need to handle that thermal shock without cracking. When it comes to power, the wattage is what drives your speed. More watts per centimeter means you hit your target temperature faster. Just a heads-up: make sure your voltage matches your power rail. You don’t want to blow a circuit on day one. As for the fit, most of our units use R7s or Sk15 connectors. We did this on purpose. They’re simple drop-in replacements for most industrial racks, so when a tube eventually burns out, you can just swap it and get back to work. No need to rewire the whole machine.
A Few Things to Watch Out For
Here’s the thing: this kind of heat is aggressive. If you mount the lamps too close to the food, you’re going to end up with charred black spots. You’ll want to play around with your mounting distance and timing until it feels just right. And don’t try to cheat the clock by over-driving the lamps. Sure, it might save you a few seconds, but it’ll kill your filaments way faster. Keep your voltage steady, and your gear will last a lot longer.
